EUROPEAN SUMMER PASTA DISHES TO MAKE AT HOME

[bigletter]As we continue indulge in these last warm months I can’t help but crave a little adventure somewhere seaside on a European coast, perhaps along the esteemed Mediterranean, a fabulous stretch playing home to some of the world’s most desirable summer destinations. This summer served as a the homecoming for many of us eager to escape the constraints of the pandemic, however, it appears we are still not quite there. And for me after bringing home bébé a taste of the Mediterranean only exists at European beach club inspired hotspots like Avra and now Issima.

Fortunately I’ve been lucky enough to frequent a few spots before the world went awry in the South of France, Amalfi coast and the Greek isles, also amongst some larger cities like Barcelona, Lisbon and Tel Aviv. But I’ve set my sights on some new spots like Dubrovnik, Majorca, Ibiza, basically any small storied town with that ultimate laid back lifestyle, fresh fish at buzzy beach clubs, long loved leather sandal shops and salty warm air.[/bigletter]

While this might’ve been #ShotGirlSummer for most, the only bottle service access I’ve had involve a combination of pumped breast milk and instant formula, me playing sober bartender to my milk drunk little man.

But that won’t stop us from getting closer to a taste of the summer sea, at least it won’t stop me, the person who hates to cook but was motivated enough to whip this lobster pasta up right before the sunset meaning you can too and I’ve added a few more Mediterranean pasta dishes worth trying out at home in the final week of summer. Enjoy!
